Modified Cobb : Avocado and Tomato Salad with Lime Vinaigrette

My brother named this one. This recipe was recommended to me by one of our close friends. My grandmother's book has so many recipes, this was new to me! Adding to lunch rotation.


INGREDIENTS:


2 teaspoons lime juice

1/4 cup olive oil

3 tablespoons wine vinegar

1 teaspoon salt

1/2 teaspoon pepper

2 large avocados

2 - 4 ripe tomatoes

Any lettuce : Bibb, Romaine,Spinach

2 or 3 hard-cooked eggs

2 tablespoons chopped fresh parsley ( I skip but parsley is good for you)


METHOD:




Step 1: In a large bowl combine the lime juice, olive oil, wine vinegar, salt and pepper. On top of dressing, add the avocado, tomatoes and eggs mix covering all ingredients with the dressing.



Step 2: Add any lettuce and parsley.
