Huevos Al Plato

One of my favorite things about Saturday is breakfast with my husband. He usually makes us a huge spread. I find this superhuman as I can not collect my thoughts before coffee. This Saturday I decided to make one of my grandmother's recipes for him. If you already own the book it is found on pg. 168. This one I love because it uses the oven. I hate trying to clean a scrambled egg pan!
Ingredients:
6 individual shallow casseroles
Butter
6 tablespoons seasoned bread crumbs
6 slices baked ham to fit casseroles (we used prosciutto). I think any of your favorites would work including meat substitutes.
12 eggs
Salt and pepper to taste
2 tablespoons melted butter
6 tablespoons grated cheese of choice
Paprika
2 tablespoons finely chopped parsley ( Not needed, but good to add some green)
Grease the casseroles generously with the butter. Sprinkle a tablespoon of bread crumbs in each casserole. We crumbled up Dr. Karg crackers. Place a slice of ham in each casserole. Break 2 eggs into a saucer and slide into the casseroles over the meat choice. Add salt and pepper to taste (reminder the ham can be salty so use with caution). Dribble a teaspoon of butter over the eggs in each casserole. Combine the cheese with the paprika and sprinkle over the eggs in each casserole.
Preheat Oven to 400 degrees F. Place casseroles in hot oven and bake until the eggs are cooked the way you like them. Sprinkle with parsley before serving.
Serves 6.
