Chunky Delicious Salsa From Clarita's Cooking Lighter

A salsa can be used in a variety of recipes - it does not have to be with chips but can enhance broiled fish or decorate a steak. This below time with salmon.


Prep Time: Depends about 15 minutes of chopping or really quickly if you have a food processor/chopper.... dreaming of one. If you are getting married add one to your registry unless you are like my mom and enjoyed chopping!


Serves: 6 to 8


INGREDIENTS:


1 1/2 pounds pump tomatoes ( about 2 1/4 cups)


2 tablespoons fresh minced basil

2 tablespoons fresh minced oregano

2 tablespoons minced cilantro

2 garlic cloves, peeled and pressed

1 onion, minced

2 tablespoons minced green bell pepper

2 tablespoons minced red bell pepper

1 hot chili pepper, finely minced

2 tablespoons rice vinegar

2 tablespoons small capers ( optional)

1/2 teaspoon salt


METHOD:


In a deep mixing bowl, place coarsely chopped tomatoes; sprinkle with basil, oregano and cilantro. Force garlic through the press; add onion and remaining ingredients.

Stir to mix well.



NOTE: Clarita in most recipes uses tomatoes that are peeled and seeded. I think here in my humble opinion this can be skipped as it is tedious. But she was the master and if done it will only enhance the flavor. Directions can be found for this in Clarita's Cocina pg. 9.
