Camarones Al Ajillo Pasta : Simple and Quick

Recipe:
1 pound large shrimp ( buy the frozen)
Salt
1/4 cup olive oil
4 Tablespoons clarified butter
Juice of 1 lemon
5 garlic cloves
Dash of hot sauce
A sprinkle of good sauterne wine
Place shrimp on a baking sheet and lightly salt.
In the skillet, heat the oil and butter. Add the coarsely chopped garlic cloves. Saute a few minutes I would say 4 minutes. Do not let the garlic brown, but do cook as the oil will have the flavor of the garlic. Take off the stove. Add the lemon juice, hot sauce and sprinkle with wine.
Add the marinade to the shrimp. Allow the shrimp to rest in the marinade while the broiler unit is heating. Broil 2 to 3 minutes on each side. The rack should be 5 inches from the heating source.
Camarones al Ajillo is a popular tapa, both in Spain and in our own country. This recipe works well with frozen shrimp. If you are like me and last minute trying to stock your freezer shrimp can be something that most people skip. They are awesome and usually wild caught and frozen on the ship they taste great. When the shrimp were cooked, I added the sauce and shrimp to pappardelle making a nice light shrimp pasta. It was delicious.
